Cuisine at the Duchess

In the late 1980’s, a movement happened in the European bed and breakfast inns that began presenting high cuisine. We were a small group at first but momentum began to build as professional chefs entered the industry. When you hear the term farm to table, this is where this trend began in Lyon, France. This style began appearing in American restaurants and then adult guest B&Bs and today has become the newest trend in unique excellent culinary delights for inn cuisine.

Chef and Innkeeper of the Nagle Warren Mansion and the Culinary Team look forward to treating you. Jas has been a leading force in the Bed and Breakfast industry for many years. Scottish raised and classically trained in Paris, with award-winning cuisine in both the U.S. and Europe. Now he brings his unique cuisine style to Cheyenne. From Lake Como to Prague and destination between, the Michelin successes of La Femme in Lyon inspired him to recreate breakfast.
In the last twelve years Jas has worked coast to coast consulting and managing top inns, including Select Registry. His innovations with culinary approaches has garnered #1 voted inns and restaurants such as Inn at Seventeen Mile, Carmel - Monterey, La Belle Epoch of Napa, Elim Restaurant, and Norumbega Castle.

Using familiar ingredients but with a twist not normally thought of as breakfast cuisine. I enjoy infusions into historic approaches. We know the foods served in this dining room and much of our menu is based on the manor owners over the years.”

We Love Breakfast

Breakfast at the Nagle Warren Mansion is an experience and is different each day. Always fresh, sweet and savory, and created each morning. The presentation of the first course begins at 9 am. We serve in the dining room and also offer more private intimate seating in the Library and Sitting Room.
As the Nagles and Randalls, the morning begins with fresh brewed coffee or a cup of tea if you desire. Mrs. Nagle preferred Lord Grey with a lemon slice. First course is fruit of the day which roasted with Grand Marnier or whiskey Carmel pear, and juice with Mrs. Simms's scones. Porridge will proceed the fruit but not fill you for the breakfast entrée. The main course is an original culinary creation each morning, often designed to the tastes of the guests. This is not short order cooking. Breakfast prep each morning may take 3 hours. Chef likes to do that.

The Afternoon Manor Hour

The favorite part of the day at the Duchess. Each evening from 5-6pm our guests are invited to partake of the Manor Hour. Your host for this nightly event will thrill you with the history and gossip of our historic home and it's guest's of the past. Okay, it's historical gossip but guaranteed to delight your stay with us.
As a world traveler, your host loves to talk with our guests about their travels and adventures. A chance to meet the other guests and enjoy an hour of carefully prepared appetizers and drinks. We look forward to having you join us, and maybe the answer to your burning questions. For example; is the manor haunted?
Dinners at the Mansion

Beginning in the fall of 2022, the Duchess will present
Two dinner events a month
Chef Jas invites noted guest chefs from throughout the Rockies to prepare their “cuisine specialty” for our dining guests. Each of these Six-Course presentations will be accompanied by the select pairing wine or alcohol appropriate to the pleasing of the palette.
Each dinner is accompanied by live music for our guests.
During the year The Duchess Dinner Club and Chef Jas Barbe presents themed private dinners. These original Six Course presentations, with pairing, presents culinary creations unique to west.
